Coconut Bowl

Yields2 Servings

Ingredients
For the Protein Smoothie Bowl
¼ cup coconut cream (from the top of a can of coconut milk or from a can of just cream -- not "cream of coconut" which contains sugar and additives)
 1 medjool date
2 frozen bananas (I cut mine in eighths before I freeze them so I always know 8 pieces=1 banana and they are easy to blend)
2 servings Vega Vanilla Protein Made Simple (or another very tasty protein powder of your choice)
 ½ tsp vanilla bean powder
 2 cups ice
For the Dessert Smoothie Bowl
 ¼ cup coconut cream
 2 medjool dates
 2 frozen bananas
 ½ tsp vanilla bean powder
1 cup ice (use frozen almond milk or coconut milk cubes for an even creamier version)
For the Chocolate Sauce
25 g dark chocolate (I like 70% dark, but use whatever you like)
2 tbsp natural peanut butter (can substitute other nut butters or coconut cream if desired)
Preparation
1

First make the warm chocolate sauce. Melt the chocolate in 2-3 20 second increments in the microwave. Stir in between. When it's almost fully melted, add the peanut butter. Microwave again for another 30 seconds. Set aside.

2

Add all ingredients to the blender in the order listed. Then blend and mash until the smoothie becomes creamy. Top with chocolate sauce and shaved (and toasted, if you like) coconut flakes. Other good toppings are: berries, chocolate granola, macadamia nuts, gogi berries, and coconut whip.
