Ingredient
 thinly shaved fennel bulb (1/2 bulb)
 thinly sliced apple (1 whole apple)
 thinly sliced avocado (1/4 medium avocado)
 sliced cucumber (1/3 a cucumber)
 2 tbsp chopped walnuts
 1/4 cup chopped fennel fronds
 juice of 1 lemon
 2 tsp extra virgin olive oil (optional)
 salt to taste
 ¼ cup blueberries
Preparation

Combine the fennel bulb, apple, avocado, walnuts, and fennel fronds. Then add lemon juice and olive oil. Add salt to taste. Top with blueberries.
